Rich Gang: Chef Megan Mitchell
A long time friend of CR, we love her recipes AND her Yahoo! web series, Grill Next Door, is a must! Megan was the chef du jour at Closet Rich’s 2 Year Birthday Party + we loved what she whipped up oh so much that we asked her to put together some recipes for us to share with you, first up:
Savory Waffles with Honey and Sriracha
Special Equipment: waffle iron
Makes 12-14 waffles, depending on waffle maker size
2 cups AP flour
1 ½ tsp. baking powder
1 tsp. baking soda
2 tsp. salt
1 tsp. sugar
1 tbsp. chopped thyme
1 tbsp. chopped chives
1 tsp. black pepper
2 cups buttermilk
¼ cup melted butter
Nonstick spray, for greasing waffle iron
Green onions, chopped for garnish
In a bowl, combine flour, baking powder, baking soda, salt, sugar, black pepper, chives and thyme. Whisk to incorporate.
In another bowl whisk together the eggs, buttermilk and melted butter.
Gently whisk wet ingredients into the dry making sure not to over work the batter but breaking up large flour pockets and making sure everything is completely mixed together. Let mixture sit for 10 minutes while the waffle iron comes up to heat.
Once your waffle iron is heated, spray with cooking spray. Ladle or pour the recommended amount of batter onto the iron and cook per manufactures directions (until golden brown and pulls away from iron easily, 5-7 minutes)
Continue until all of the batter is used. Plate waffles with a drizzle of honey, sriracha and a sprinkling of green onions.
